Dill Popcorn Shrimp Recipe

I started making this recipe upstate years ago. It's a huge crowd pleaser so every few years I bring it back. I love making food that's just fun and makes people want to gather together and enjoy themselves and this recipe does just that. 

This recipe is served with my mom’s cocktail sauce for dipping. My mom’s brilliant addition to a standard cocktail sauce recipe is minced hearts of celery with leafy tops. It adds extra flavor and a little crunch.  Celery tops are delicious, try throwing them in with whatever recipe you're making with celery and they’ll never end up in your trash again. 

Pairs well with Popcorn.

Ingredients

For The Popcorn Shrimp:

  • A couple quarts of frying oil
  • 2 ½ pounds of medium pink shrimp, deveined and with tails removed
  • Juice of 1 small lemon
  • 1 cup of AP flour
  • ⅓  cup of cornmeal
  • 3 tablespoons of Old Bay or other seafood seasoning of choice
  • Finely chopped fresh dill and chive, to garnish
  • Small wedges of lemon, to serve

 

 

For The Cocktail Sauce:

  • 1 cup of ketchup
  • 3 tablespoons of prepared horseradish or freshly grated horseradish
  • 2 tablespoons of Worcestershire sauce
  • Juice of 1 lemon
  • A few dashes of hot sauce of choice
  • 1 tablespoon of coarse ground black pepper
  • ¼ cup of minced celery with leafy tops from the heart of the celery

Directions

For The Popcorn Shrimp:

 

Heat three inches of oil to 350 F (175 C) in a deep pot. Line a sheet tray with parchment for easy cleaning and set a wire rack on top of it. 

 

Toss shrimp together with lemon juice in a medium bowl.

 

Whisk together flour, cornmeal and seafood seasoning in another medium bowl. 

 

Coat the shrimp in the cornmeal mixture and fry in batches until deeply golden. Be sure to allow the oil to come back up to temperature in between batches. Drain fried shrimp on the prepared sheet tray with the wire rack. 

 

Add the shrimp to the serving platter on top of the popcorn. Garnish with dill, chives and lemon wedges.

 

 

For The Cocktail Sauce:

 

Mix together all sauce ingredients and serve in a chilled bowl placed in the middle of the popcorn platter.
