Tomato-Lime Salsa

Serve with Fried Fish Tacos Deluxe.

Ingredients

  • 1 red chili pepper, such as a Fresno pepper, seeded and finely chopped

  • 1 green hot chili pepper, such as a Serrano or jalapeño pepper, seeded and finely chopped

  • 1 medium red onion, finely chopped

  • 3-4 ripe tomatoes, seeded and chopped (2 cups)

  • 2 limes

  • Salt, to taste

  • A generous handful of cilantro, finely chopped (about 1/4 cup)

  • A small handful of mint, very finely chopped (a couple of tablespoons)

Preparation

In a bowl, combine the ingredients, using the zest of one lime and the juice of both limes; adjust the salt, to taste.
