1 almost-gone jar salsa verde (only a couple tablespoons left)
1/2 red onion, finely diced
2 tablespoons cilantro, chopped
1/2 cup red wine vinegar
1/2 cup olive oil
Salt and pepper
Combine all the ingredients in the salsa jar, screw the top back on and shake to combine. Toss with your favorite salad greens and serve.
