Rachael's Crispy Smashed Potatoes Recipe
Crispy smashed potatoes are the ultimate side dish—golden, crunchy, and impossible to resist. They’re easy to make and go with just about everything, from weeknight dinners to holiday feasts. Ingredients
½ pound small potatoes per person
Salt
Melted butter
Pepper
Herbs, such as chives, dill, and/or parsley
Directions
Boil potatoes to just tender in salted water, then drain and cool. Squish with bottom of a juice glass and coat in melted butter, salt and pepper. Roast until very crispy and deep golden. Garnish with herbs of choice, such as chives, dill, and/or parsley.
