Homemade Yogurt and Granola

Ingredients

For the granola:

  • 14 ounces rolled oats

  • 3 1/2 ounces honey

  • 3 1/2 ounces sugar in the raw

  • 3 1/2 ounces canola oil

  • 7 ounces mixed nuts and grains (almonds, quinoa, millet)

  • 7 ounces dried fruit (raisins, apricots, cranberries)

For the yogurt:

  • 4 cups milk

  • 1/2 ounce old yogurt

  • 1/2 vanilla bean

Directions

For the granola:

Mix all the ingredients except the dried fruit and bake at 250°F for 45 minutes to 1 hour, stirring every 15 minutes until golden brown. Fold in the dried fruit, then let cool.

For the yogurt:

Bring the milk to a boil, then let cool to 110°F. Add in the old yogurt and let sit overnight, undisturbed and covered, in a warm area. Let the yogurt cool for 4 hours, then hang in cheesecloth for 6 hours, or until it reaches desired consistency. Whip lightly with 1/2 vanilla bean. Add the yogurt and granola together in a bowl. Serve with any additional fresh fruit you like.
