Bread and Butter Pickles

Ingredients

  • 1 cup cider vinegar

  • ½ cup water

  • 3 or 4 small fresh bay leaves

  • 1 tablespoon coriander seeds

  • 1 tablespoon mustard seeds

  • ½ teaspoon celery seeds

  • ½ teaspoon ground turmeric

  • ½ cup sugar

  • 2 tablespoons sea salt

  • 2 ribs celery with leafy tops, chopped

  • 1 small onion

  • 1 pound seedless cucumber(s), sliced into rounds ¼-inch thick

  • A few sprigs dill and parsley

Preparation

Serves: Makes about 1 pound

Heat vinegar, water, bay leaves, seeds, turmeric, sugar and salt over medium-high heat to a low boil, stirring to dissolve the sugar. 

Meanwhile, layer celery, onion, cucumber, dill and parsley in a glass or plastic airtight container. Cover with hot brine and chill until ready to serve.
