  • Honey from the bottom of the jar (about 1/2 ounce)

  • 1/2 ounce hot water

  • 2 1/2 ounce bourbon

  • 1 ounce fresh lemon juice

  • Fresh thyme sprig, for garnish

Put ice and water in a cocktail coupe to chill.

Add hot water to honey jar and stir well to create honey syrup. Add remaining ingredients, cover jar and shake to combine.

Empty ice and water from coupe. Pour ingredients from jar into an ice-filled cocktail shaker, shake well and strain into coupe. Garnish with thyme.
