Swedish Christmas Crullers
Lemon adds a lift to these fried cookies.

Ingredients
- 4 egg yolks
- 1 tablespoon brandy
- 1/4 cup powdered sugar
- 1 tablespoon lemon rind, grated
- 3 tablespoons butter
- 1 1/2 cups flour
- Vegetable oil, for frying
Makes approximately 2 dozen cookies
Preparation
Mix the ingredients and stir until well blended. Chill.
Turn the dough out onto a floured surface.
Roll out to 1/4-inch thick. With a pastry wheel, cut strips 3/4-inch wide by 3 inches long. Cut a gash in the center and twist the end through.
Fry in oil heated to 375°F until light brown.
Drain on a paper towel.
Prior to serving, dust with powdered sugar.
