Peach Crumb Bars Recipe from Jake Makes It Easy

These Peach Crumb Bars are a delightful mix of buttery crumb layers and juicy, sweet peaches, creating the perfect dessert for any summer occasion. Ingredients

For the Dough:

  • 4 cups (540g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ¼ cup packed (50g) light brown sugar 
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 pound (4 sticks) unsalted butter, cubed and chilled
  • 3 large eggs, lightly beaten

 

For the Filling:

  • 2 pounds ripe peaches, halved, pitted, and cut into wedges
  • ½ cup (100g) granulated sugar
  • ¼ cup cornstarch
  • 2 tablespoons freshly squeezed lemon juice
  • ½ teaspoon kosher salt

Directions

Preheat the oven to 350°F. Line a 9 by 13-inch baking pan with parchment paper, leaving overhang on all sides.

 


For the dough: In a food processor, pulse the flour, granulated sugar, brown sugar, salt, baking powder, and cinnamon to combine. Add the butter and pulse until pea-size crumbles form. Pour in the eggs and pulse until the dough just comes together. Press two-thirds of the dough into the prepared pan in an even layer and set the remainder aside.

 


For the filling: In a medium bowl, toss the peaches, sugar, cornstarch, lemon juice, and salt to coat. Pour the peaches into the pan and spread them into an even layer. Pinch off small pieces of the remaining dough and scatter them over the peaches.

 


Bake for 50 to 60 minutes, until golden brown and bubbling. Let cool in the pan completely, then transfer to a cutting board, slice into squares, and serve.
