Maria’s Spiced Cider Cookies Recipe

Optional icing:
Preheat oven 350F.
In a mixing bowl combine flour, baking soda, cinnamon, salt, ground clove, nutmeg and pecans - set aside.
In another bowl, combine the grated apple and the apple cider - set aside.
In the bowl of a standing mixer with paddle attachment, thoroughly combine the butter and sugar at medium speed. Add the egg and continue to mix until combined.
Turn the mixer down to medium low. Alternate adding flour mixture and apple mixture by adding 1/2 flour mix, once combined then add 1/2 apple mix, once combine, repeat.
Prepare 3 to 4 baking sheets by lining them with parchment paper. Using a 1-inch cookie scoop, scoop and drop dough on a baking sheet, about 2” apart.
Transfer to the oven and bake for about 30 to 25 minutes. Remove from the oven and transfer to a wire rack to cook.
If you like icing, in a small bowl combine the 10X sugar with the apple cider. You can drizzle or lightly brush a small amount on each cooled cookie using a pastry brush.
