2 tablespoons soy sauce
2 tablespoons honey
2 tablespoons extra virgin olive oil (EVOO)
Salt and freshly ground black pepper
5-6 carrots, peeled and cut into chunks
Pre-heat the oven to 375ºF. In a small bowl, stir together the soy sauce, honey, EVOO and some salt and pepper. Put the carrots into a casserole dish and toss them with the honey-soy mixture. Roast, turning occasionally, until tender, about 30 minutes. Serve warm. This is one of many "Yum-o!" recipes – it's good and good for you.
