Cool-as-a-Cucumber Gazpacho


  • 1 cucumber, peeled and seeded

  • 1 small tomato, seeded and coarsely chopped

  • 1/2 bell pepper, seeded and coarsely chopped

  • 2 tablespoons fresh parsley, coarsely chopped

  • Salt and pepper (for people portions)


Using a blender or food processor, pulse all of the ingredients. Thin with 1/2 cup-1 cup water as desired. For people portions, season with salt and pepper.
