Ingredients
1 1/2 cups sugar
1 cup vegetable oil
3 eggs
1/2 cup buttermilk
1 cup pecans
1 cup mashed prunes
2 cups flour
1 teaspoon baking soda
A pinch each of : salt, cinnamon, allspice and nutmeg
1 teaspoon vanilla
For the glaze:
1 stick butter
1/2 teaspoon baking soda
1 cup sugar
1/2 cup buttermilk
Preparation
Pre-heat the oven to 350°F.
Make the cake: mix together the sugar, oil and eggs with an electric mixer and beat until fully incorporated and smooth. Add the rest of the ingredients and stir until just combined. Pour into a greased and floured 9-inch x 13-inch cake pan. Bake the cake for 30 minutes, then remove and let cool in the pan.
Make the glaze: combine all ingredients in a small saucepan and heat on low heat until the sugar dissolves and the butter is melted. Remove from the heat and whisk together.
Once the cake is cooled, pour the glaze over it.
