Breaded Pork Chops

QUESTION: Dear Rachael,

I like making breaded pork chops in the oven. After I season and bread them, I usually put some chicken stock in the bottom of the baking pan with a little EVOO, place the breaded pork chops and squeeze a lemon on top of them before baking in the oven.

Question? My breadcrumbs tend to fall apart from the meat while baking. How do I prevent this from happening? What am I doing wrong?

ANSWER: Nancy, have you tried browning the breaded chops in a frying pan before you put them in the oven to bake? That would most likely help seal the breadcrumbs to the chop better.
