Birthday Cookie Cake
A giant chocolate chip cookie cake will be a hit for birthdays and couldn't be easier!
Ingredients
- 2 sticks butter, softened
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- A scant 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 2 cups chocolate chips
- Frosting, homemade or store-bought
Preparation
Pre-heat the oven to 375°F.
Spray a standard round pizza pan or jelly roll pan with nonstick cooking spray. Cut a piece of parchment paper to line the bottom; place the paper on the bottom of the pan and spray with cooking spray. Set aside.
Cream the butter and sugar until light and creamy. Add the eggs and vanilla and beat to incorporate. In a small bowl, whisk together the flour, baking soda and salt. Add to the butter mixture and mix to combine. Stir in the chocolate chips. Spread in the prepared pan – you will need to work with it and it will not completely reach the edges of the pan.
Bake for 15-20 minutes, or until a a toothpick comes out just clean. Decorate with frosting when completely cool.
