Mashed Tangy Sweet Potatoes
These tangy sweet potatoes are delicious all year round! Try them with your favorite chicken recipe, such as Crunchy Cornmeal Fried Chicken and Quick-Seared Chard.

Ingredients
- 2 1/2 pounds sweet potatoes, peeled and sliced or cubed into bite-size pieces
- Salt
- 1/2 cup warm chicken stock
- 3/4 cup sour cream or yogurt
- 1 teaspoon orange zest
- Juice of 1/2 orange
- A pinch of cayenne pepper
- 2 tablespoons butter
- A drizzle of honey
- Salt and pepper
Serves 4-6
Preparation
Place the potatoes in a pot, cover with cold water and add some salt. Bring to a boil and cook until tender.
Drain and return the potatoes to the warm pot. Mash with the chicken stock, sour cream or yogurt, orange zest and juice, cayenne pepper, butter, honey, salt and pepper.
