I am from Sweden and my husband is from New York. Last year we got pregnant and moved back to Sweden.
This is a recipe that I got from a friend. I was preparing a cake for a client and it did not turn out well – the center looked like a donut!

Mengle-Haven Potato Salad
This is our grandmother's wonderful homemade German potato salad recipe that we enjoyed with her over several decades. She has since passed away and we keep the recipe alive.
In the ancestral land of the native people of Colombia, South America, where fertile coffee farms thrive, lived an intrepid individual, Julio Uribe (my father). In his passion to embolden the culture of his heritage while living far away from his country in New York City, he set out to create a salsa to remind those who long for the combined taste of life and culinary delight so common to our home.
This recipe is one of the many from our family's cookbook, Eating Italian, which is also a loving history and photo book. It is in honor of three sisters, including my mom.
With seven people to cook for every day, it became a chore to have enough of one thing to feed everyone. So I came up with this concoction, which includes ingredients my whole family likes.
My sister and I grew up in Scotland during the 70's and we learned about making these "paste eggs" from a dear friend of my mother's. My dad was stationed in Scotland for several years, and every Easter my mom, sister and I would make these wonderful paste eggs.
We have been making this recipe for the last 25 years. This recipe was given to me by my sister, Lynda.
