Corn Fritters
My mom had a hard time getting us kids to eat our veggies. This recipe was a way to get us to eat veggies, even without sugar. My mom would put peas, carrots, green beans and other veggies in the fritters so that we would get our veggies that we needed without tasting them. I hope you like them as much as we did!

Ingredients
- 2 eggs
- 1/2 cup milk
- 1 cup flour
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1 1/2 teaspoons vegetable oil
- Corn, as much as you like – you can also substitute the corn with any vegetable
Preparation
Mix all the ingredients together. Fry up the fritters in a pan like you would pancakes.
Serve the fritters on their own or as side dish.
